I like this idea as well but I will tell you in case you have not yet seen it, you can export your devices list and the enrollment date will be in the exported file data. So at least there is a work around but I would very much like to see it myself on the main device info screen. I have used that many times when using Intune so would like to see it as a feature in SimpleMDM and this would be SO easy to implement.
